Greek Salad

As the summer produce starts to pour in, this fresh-from-the-garden treat becomes a regular side to all of my backyard BBQs and picnics.  It is light, refreshing and doesn’t include mayonnaise, which tends to be a big worry for most picnic goers.

If you’re growing cucumbers, tomatoes and peppers in your garden, remember to protect your produce with Liquid Fence Deer & Rabbit Repellent.  It’s safe for use on edible crops and guaranteed protection for all of your plants. Greek Salad:

3 medium-sized tomatoes, diced
3 cucumbers, diced
2 medium-sized green peppers seeded and diced
5-10 Kalamata olives (or 10-15 green olives)
1 tbsp capers
1/4 – 1/2 pound feta cheese
1/3 cup olive oil
1 tsp oregano
Salt and black pepper to taste

Add the tomatoes, cucumbers, green peppers,olives and capers into a large bowl. Crumble the feta cheese and add to the bowl with the other ingredients. Add the oregano and olive oil. Make sure everything is well-combined. Season with salt and pepper. Serve chilled

Fully Loaded Potato Salad

This is perhaps my favorite potato salad recipe.  It’s full of all sorts of yummy things like bacon, cheddar cheese and sour cream.  But it still tastes light and refreshing on a hot summer day.  It’s the perfect dish to prepare for your next picnic, just don’t expect any leftovers!

And remember, don’t run off to a picnic without your Liquid Net.  Nothing repels biting bugs better than Liquid Net for people, pets and horses!

6-7 medium sized red potatoes
5-6 slices bacon
3/4 cup shredded cheddar cheese
1/2 cup of sour cream
1/2 cup of mayonnaise
6 scallions (green onions)
Salt (to taste)
Pepper (to taste)

Boil whole potatoes until fork tender, approximately 20 minutes.  Drain the potatoes and let them cool.  Cook the bacon until crispy.  Drain, cool, and crumble the bacon and set aside.  Finely chop the scallions.  Cut potatoes into bite-sized pieces and pour into a large bowl.

Mix the sour cream, mayonnaise, salt and pepper in a bowl.  Add the sour cream mixture, cheddar cheese, 1/2 of the bacon and 4 of the scallions to the potatoes and gently toss, trying not to mash the potatoes.  If dry, add more mayonnaise and sour cream with a 1:1 ratio.  Taste and season with more salt and pepper if necessary.  Top with the rest of the bacon crumbles and the remaining scallions.
